All my shows in the guide listing are 5hrs off... so I set the time to adjust -5 for EST etc... but the shows in the guide are still off. Is there another spot I must set this at?

you shouldnt' have to use a time offset at all.
sounds like
1) your time is wrong
or
2) most likely your system clock is set to gmt.

I found that you need to restart the backend and mysql after the clock change and before filling the database otherwise they still think they're in the original timezone.
