How do people go about configuring MythTV to use a universal
remote?

Are there any existing config files for use with a universal
remote configured to talk to a particular brand/model of VCR or
DVD or TV or DVR or ??

Or do you just pick some device at random, configure the remote
to talk to that device, and then go through the code-learning
exercise with irrecord?

I used your last method. One one of my remotes there was a code for "TiVo" so I set it to that and then used irrecord to learn the IR pulses. My other remote had no such option, so I chose a "VCR" and had irrecord learn that.

I thought I had seen a site where one could download files from
irrecord for various remotes, but I can find it now.
