I am attempting to setup an mythtv machine on an athlon 2100+ (tbred-b) on an nforce1 chipset with a pchdtv card as well as a pvr250 (both have already been ordered). Is the 2100+ going to be able to handle it , or would it really be able to make use of a 2600+ ?

With the pcHDTV, you'd be better off with the 2600+. According to the pcHDTV forums, problems exist with using it and a ivtv based card at the same time... Please let us know how it works out.

and you'll need to get an external vid card gf4mx or higher to take advantage of the xvmc support. If you have to choose between a new mb nf2/new vid card and the faster processor I would go with the mb/vid
