I'm using the NEC 2510A DVD (d/l) burner in my MythTV box.

This DVD drive seems to work correctly. I burned a DVD from the KnoppMyth R4V4.1 install. I used "growisofs" and the MythtvBurn package that is outlined here: http://mysettopbox.tv/phpBB2/viewtopic.php?t=1695

I don't think the mythtvburn software goes as far as outputting to your DVD yet, but it comes close. I have additional info on how to write your DVD's from your MythTV box here:

I don't have any D/L DVD's yet, but the 4.7G Memorex +RW's that I have worked without any problems.

I've burned some recorded shows to DVD+RW format DVD's on this drive and they successfully played back on my Sony DVD player.

My end goal is to get rid of the VCR, but the wife approval factor (WAF) has to be there before I can do that. This means no command line stuff in order to burn recorded shows to the DVD. The mythtvburn software seems to be very close (unless I missed something), but does not go as far as burning to a DVD drive (yet). It's trivial to add, so I may do this myself if I get antsy :)

there was just an announcement on the forums about a new version of NUV2Disk which backs up recored programs to dvd or vcd, but I'm not sure if it will do video or dvd rips.

It was meant to work on NUV files, and at the moment the gui portion will not work for dvd/video rips. However all thats is needed is the script to convert the video to something dvd comptabile and it should work.

I now have MythTV running out of my PVR350 (both video and menu) and have hit a snag with nuv2disk. The script now complains that my screen size is inadaquete for it to run, and wants me to increase the size to 800x(something). This kind of kills off this option for me and many others. If a word-around comes about please let me know.

Editing out the size check causes it to fail to come up at all, but a good try.

I had to do this myself. Edit the "MYX=" and "MYY=" lines to match your resolution. Some of the screens may bleed off the edge, but at least you'll get something.
