Is this the command that I want to use to verify that Samba is running?

root@mythtvhost:~# ps -e | grep smbd
 3419 ?        00:00:00 smbd
 3437 ?        00:00:00 smbd
 4879 ?        00:00:00 smbd
14725 ?        00:00:08 smbd


I ask because there seems to be more than one instance.

there will be an instance for every connection that is active.

you can look at /var/run/samba/smbd.pid to see which one is the daemon listening for connections.

you can also check that your box is listening on the correct ports:
