I've been running this for quite some time now. In an effort to clean up my home 'lab' environment, I consolidated several things onto a hypervisor.

Hardware: Intel NUC6 'skull canyon' with 4 core i7 2.6GHz CPU, 64GB RAM, 2TB NVMe SSD
Hypervisor: ESXi 6.7 (free license level)
Tuners: HDHomeRun Prime - Network-based QAM(cable) 3x tuners
Network: NUC, NAS and tuners are on a gigabit switch (Ubiquiti PoE switch)

LinHES: 8.6.1
virtual hardware: 2 CPU Cores, 4GB RAM, 80GB OS Disk on SSD
Recording Storage: NFS Mount to 1TB drive in Synology NAS

It has worked quite well. I could probably reduce the memory/disk/cpu for the VM and still be fine, but haven't had the need.
VNC access works well for any mythtv-setup or other local GUI operations. But, I primarily monitor via mythweb and ssh.

My frontends are an Nvidia Shield and an AppleTV, accessing the backend via wifi.

I have been running my BE on ESXi for many years and it is fantastic, I store my files on a NAS instead of locally and have been using MythTV FEs until recently where I have moved to nVidia Shields using Kodi and the MythTV plugin.
