I've been thinking of instally knoppmyth on my spare parts for a while now. It'll consist of

ECS k7s5a pro with a 750mhz duron
512mb SDRAM
ATI TV-Wonder PCI (from 1999)

The motherboard has onboard sound but I'm not sure if it's supported under linux. Would this make a decent mythbox for normal TV recording? I think the 750mhz duron is cutting it kinda close for realtime mpeg2 encoding and I doubt I'll be able to watch while recording another show.

Yes, you can.
But you forget about live tv, maybe freevo is a better option for you, or you can use Mythtv only for record tv, and play dvd's and play games, with certain limitations.
Maybe is a good option upgrade the CPU.
I don't know about your sound card in linux but maybe you change for a good SB.
